Ingredients:
4 T unsalted butter
1/4 c yellow onion, minced
4 garlic cloves, minced
1/2 t salt
1/4 t pepper
2 1/2 c chicken broth
1 1/2 c jasmine rice, rinsed
Method:
Melt 1 tablespoon of butter over medium-high heat. Once melted sauté the onion until soft, 3-4 minutes. Add the garlic and continue sautéing for another 1-2 minutes.
Add salt, pepper, and broth and bring to a boil. Once boiling add the rice, cover, and reduce the heat to low. Simmer for 12-15 minutes or until all of the liquid is absorbed. Remove from heat and let sit uncovered for 5-10 minutes.
Mix in the remaining butter and fluff with a fork.
