Easy & Delicious Garlic Butter Rice



Ingredients:

  • 4 T unsalted butter

  • 1/4 c yellow onion, minced

  • 4 garlic cloves, minced

  • 1/2 t salt

  • 1/4 t pepper

  • 2 1/2 c chicken broth

  • 1 1/2 c jasmine rice, rinsed


Method:

  1. Melt 1 tablespoon of butter over medium-high heat. Once melted sauté the onion until soft, 3-4 minutes. Add the garlic and continue sautéing for another 1-2 minutes.

  2. Add salt, pepper, and broth and bring to a boil. Once boiling add the rice, cover, and reduce the heat to low. Simmer for 12-15 minutes or until all of the liquid is absorbed. Remove from heat and let sit uncovered for 5-10 minutes.

  3. Mix in the remaining butter and fluff with a fork.
